Red Apple and Cabbage Coleslaw
Snacking does not necessarily mean consuming junk all the time. For me, snacking is an innovative way to consider the ingredients in my fridge and put them to use. I took the quintessential American picnic salad and made it into a perfect snack for two.
Salads are rich in nutrition and can be put together by combining heterogeneous ingredients. Make a delicious dressing and there you have it a healthy option for a snack.
Here is my simply Apple and Cabbage Coleslaw with a neat tangy, creamy honey mustard dressing. This whole thing comes together in a snap and what is great about it is that it retains the crunchiness of the apples and cabbage while adding a bit of sweetness to the salad.
Ingredients to serve 2:
1 red delicious apple julienne
1 cup sliced cabbage
2 tsp chopped parsley
For the dressing:
2 tbsp mayonnaise (substitute with low fat yogurt if your worried about the calories)
1 tbsp honey mustard
1 tbsp honey
few drops of lemon juice
Salt and pepper to taste
Method:
Chop the cabbage and red apple and keep aside. Combine the ingredients for the dressing and whisk to get a smooth creamy dressing. Pour the dressing over the chopped apple and cabbage, mix them to incorporate and garnish with some parsley if desired. Serve chilled or at moderate temperature.
