Mint Chocolate Truffles

This holiday I wanted to make a fresh dessert and bring something new and lively to the table after a scrumptious Christmas dinner. It's been a while since I spent Christmas with my family and it was a joyous occasion to return home in time for all the festivities and also catch up with my loved ones over the holidays. In return, I wanted to make Christmas dessert special so I made some Mint Chocolate Truffles - easiest truffles you can ever make and the sweetest dessert for any occasion.
Recipe:

To make about 30 golf size truffles you will need

  • 2 cups of dark chocolate morsels or about 500g dark chocolate(70% cocoa solids)
  • 4 tbsp of diced butter
  • 2 cups of heavy cream
  • 4 tsp clear honey
  • small bunch of mint


For the coating you can try one or more of the following :
  • cocoa powder
  • crushed chocolate flakes
  • crushed digestive biscuits
  • finely chopped pistachios or almonds


Method:
In a medium saucepan over medium heat add the cream. 
Lightly bash the mint springs to release the fragrance and add to pan. Heat till the cream is infused with the mint for about 5 minutes

Break the chocolate and in a heatproof bowl. Add the butter and honey. 

Strain the hot cream through a sieve and onto the chocolate. Stir to melt chocolate mixture.

Pour the chocolate mixture into a shallow bowl and refrigerate for an hour or until firm

To form the truffles, gather your coatings and take the truffle mix and form golf size balls. You need to work quickly as the chocolate can start getting sticky and messy as it melts. Toss the truffles in your preferred coating and arrange on a plate.

Consume as soon as possible.
