Refreshing Watermelon Cooler
Feeling the heat already?ahh, it is time to put all that fresh fruit produce to good use. Lemonades, coolers, spritzers or punch, get your hands on some summer fruit and get to experimenting in the kitchen. Go ahead and start with a fresh watermelon drink for the season. Here's the recipe that worked for me...
Ingredients
4 cups sliced seedless watermelon, rind removed
1 lemon juiced
1 tsp lemon zest
2 tbsp sugar
1 1/2 cups cold water
Watermelon wedges and mint, for garnish
Directions
In a food processor, blend watermelon, lemon juice, sugar and lemon zest until very smooth.
Add 1 1/2 cups cold water, cover and refrigerate until very cold.
Serve over ice and garnish with watermelon wedges and mint or on a very hot day, just gulp.
