Fish Tacos With Red Cabbage & Lime
This easy to make fish taco recipe combines marinated Tilapia fillets that are grilled to perfection and then combined with lime juice and sour cream dressing on top of a toasted tortilla soft taco shell. Served with sliced cabbage and creamy dressing, this makes a delightful meal for a Friday night combo.
Optional : Serve with a glass of fresh lime margarita or chilled Corona for a nice scrumptious meal.
To make this recipe you will need:
1 lb tilapia fillet cleaned and washed
2 tbsp. extra virgin olive oil
¼ cup sour cream
1 lime, ½ finely zested and juiced
Tabasco Sauce or Taco Sauce
10 corn tortillas
1 cup red cabbage finely sliced
1 cup fresh cilantro chopped
1 small white onion finely chopped
Salt to taste
Pepper to taste
Method:
Heat broiler with the rack in highest position. Pat fish dry
with paper towels to remove any moisture and gently coat with olive oil. Place
on baking sheet and season with salt and pepper. Broil until fish is cooked for
about 5 minutes.
You can also grill the fish or pan fry with as little olive oil
as required.
Combine sour cream, lime zest, lime juice, taco salsa/sauce, salt
pepper and set this dressing to rest.
Finely slice the cabbage and onions and chop cilantro and
set aside ready to serve.
Toast the tortillas on both sides till golden brown.
To serve:
Divide the fish evenly among the
tortillas and top each tortilla with cabbage, onions and cilantro. Drizzle the sour cream and lime dressing and serve.
