Zucchini Crisps
For anyone who is always concerned about eating healthy over junk, finding and experimenting recipes that make eating healthy interesting is my new go to. This one I picked up from the Internet and like everyone who successfully made it, the satisfaction convinced me to give it a try.
Here is my take on a healthy snack that is so easy to prepare and can be served immediately.

Ingredients
3 large zucchinis
2 tablespoons olive oil
1/3 cup grated parmesan cheese
1/3 cup bread crumbs (use pancko for that extra crunch)
salt and pepper to taste
Method
Preheat oven to 450˚F and line a baking sheet with parchment paper. Set aside.
Using a peeler, peel stripes along the outside of the zucchini, lengthwise, spacing the stripes evenly. Then, slice the zucchini into quarter inch thick slices.
Toss the slices into a bowl and coat with olive oil.
In a separate bowl, combine the dry ingredients.
When ready to bake, coat each zucchini slice in the dry ingredients, coating both sides.
Place on the baking sheet and bake for 25 minutes, until browned and crisp.
Serve hot.
